Rhubarb from Garden Upside Down Cake
My thanks go to Lois over at Living Simply Free as I won her treasured Grandmother’s Recipe Book which I was able to download. In it I came across this wonderful recipe and as I had lots of Young Rhubarb in the garden waiting to be eaten.. I madethis excellent Rhubarb Upside Down Cake…
I didn’t have any Yellow Cake Mix, so mixed up a quick simple sponge cake which I am sure any good cook knows how to make..
So the Recipe is as follows:
I converted the cups using Delia’s Conversion of weights

Easy Rhubarb Upside-Down Cake
Prepare one yellow cake mix as directed on
box and pour into cake pans.
Combine the following:
6 cups rhubarb, chopped
1 cup sugar
1 cup milk
Pour this mixture over the top of the cake mix
and bake one hour at 350 degrees.
Rhubarb Upside-Down Cake
1. Melt ¼ cup butter in 13 by 9 pan or 2 round
8 inch pans
2. Spread over the melted butter ¾ cup firmly
packed brown sugar
3. Follow with 3 cups cubed rhubarb.
Prepare a boxed white cake mix as directed on
package. Pour over fruit in the pan.
Bake at 375 degrees for 30-35 minutes.
While warm, turn pan upside down onto platter
and serve with whipped cream
